This goes together in no time at all. Leave the quinoa out of this recipe if you are still on Atkins Induction Phase. This recipe is suitable for all other phases of Atkins and many other Keto diets.
- ½ lb. ground beef (mine was 90% lean)
- 2 c. homemade beef broth
- 1 c. tap water
- 10-oz. zucchini, diced ½”
- 1 T. quinoa (omit for Atkins Induction phase)
