I love mashed potatoes! They are one of my favorite sides to eat at Thanksgiving. This year I decided to try to make a healthier version and make it vegan. They turned out awesome!

These potatoes are creamy, delicious, and have a great depth of flavor from the fresh garlic and onion puree. Try these potatoes for a healthier twist on a favorite side dish!
