These tasty little Lemon Blueberry Muffins are gluten free and made without any refined sugar! A delicious breakfast (or anytime) treat!

Ingredients

  • 1 cup all purpose (gluten free) flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp baking soda
  • ⅓ cup honey, slightly warmed
  • 4 TBS Finlandia unsalted butter, melted
  • Zest & juice of 1 lemon
  • 1 egg, whisked
  • 2 TBS vanilla flavored Greek yogurt
  • 1 cup fresh blueberries
  • Finlandia salted butter for serving
