  • 2 teaspoons fresh lemon zest

  • 2 large eggs, at room temperature
  • 1 cup plus 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup full-fat milk
  • 1/3 cup fresh lemon juice
  • 1/4 cup canola OR coconut oil (melt coconut oil first, if using)
  • For the Creamy Lemon Frosting:
  • 4 ounces cream cheese, VERY soft
  • 1/4 cup unsalted butter, VERY soft
  • 2 cups confectioners' sugar, sifted
  • 1 teaspoons fresh lemon zest
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon salt
  • 2 tablespoons full-fat milk, more if needed
