Healthy, Low Fat and Easy Vegetable Lasagne

A low fat and yummy lasagne that is packed full of vegetables, light ricotta cheese and a few little sprinklings of paprika and sunflower seeds.

Ingredients

  • 3-4 cups of diced vegetables
  • 400g minced meat (beef, lamb or chicken will all work fine!)
  • 400g tin of diced tomatoes
  • ¼ cup of tomato paste
  • 500g light ricotta cheese
  • 1 teaspoon nutmeg
  • salt and pepper
  • ¼ cup of skim milk
  • 1 packet of lasagne sheets
  • paprika for sprinkling
  • small handful of sunflower seeds
