Vegan Red Lentil, Sweet Potato, Kale Curry {Gluten-Free}

A comforting hearty bowl of vegan red lentil, sweet potato and kale curry is perfect on a cold night. Gluten-Free too. Just brimming with flavor.

Ingredients

  • 1 cup diced onion (1/2 of a large onion)
  • 4 cloves garlic, minced
  • ½ jalepeno, deseeded, diced
  • 1 tablespoon diced ginger
  • 1 tablespoon olive oil
  • 1 large sweet potato, (about 2 and ½ cups diced)
  • 2 cups vegetable broth
  • 1 cup red lentils, sorted through and rinsed
  • 4 ounces baby kale
  • 1 cup canned chickpeas, rinsed and drained
  • to garnish: chopped scallions, cilantro and thai chili sauce
  • 1½ cups brown rice, cooked according to package directions
