Ingredients

  • 12 eggs
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 1/8 teaspoon coriander
  • ½ cup roasted tomato salsa (chunky)
  • ½ tablespoon lime juice
  • 1 poblano pepper, diced
  • 5 cloves garlic, minced
  • 1 small-medium size sweet onion, minced
  • 1 ½ cups black beans (or one 15 ounce can, drained and rinsed)
  • 2 cups pinto beans (or one 15 ounce can, drained and rinsed)
  • 4 cups cheddar cheese (less if preferred)
  • 2 tablespoons butter, sliced in half
