Tourtière: Canadian Spiced Minced Meat Pie

  • 1 pound ground pork
  • 1 pound ground beef
  • 2 medium onions, diced
  • 4 stalks celery, diced (for about ½ cup)
  • 4 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoons ground cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 cup dried breadcrumbs (preferably panko)
  • 2 sticks fresh thyme, finely chopped
  • 1 stalk fresh sage (optional, but recommended)
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 cup vegetable stock (or water)
  • 1 egg, beaten for an eggwash
  • 2½ cups super fine pastry flour (we used this flour from Bob's Red Mill)
  • 1 cup grass-fed butter, cubed
  • ½ teaspoon salt
  • ½ teaspoon sugar (we used coconut sugar)
  • 2 tablespoons pure vodka (optional, but it helps)
