This recipe is the definition of comfort food. My dad grew up on a potato farm in rural Norway, so potatoes basically are in my blood. I also have fond memories of my obachan (Japanese grandma) frying up similar potatoes whenever she was babysitting us kiddos. We would run wild in her big backyard and then come back inside for a quick pan-fried potato and apple slice break. The best.
This recipe is a fancy version of the fries she would make for us! It involves all the same flavors, but with extra garlic (#nevertoomuch) and chopped parsley for some green (which makes it basically good for you ). I made these with my sister and we scarfed down the entire batch!
- 2 tbsp olive oil
- 1 tbsp butter
- 3 large russet potatoes, sliced lengthwise into ½-inch circles and cut into ½-inch strips
- 3 cloves chopped garlic
- sea salt
- cracked black pepper
