It is a great way to get in mood for the upcoming season with a mug of hot chocolate, some freshly baked scones and a spicy cranberry-quince jam. As soon as the syrup is cooking add quince, spices and cook over low heat for about 30 minutes. Then add cranberry, orange juice and its freshly grated zest and cook for another 15-20 minutes.
