Pumpkin Chocolate Chip Muffins- How to Preserve Pumpkin

I made these Pumpkin Chocolate Chip Muffins this week and they were De.Li.Cious!  The recipe made a dozen perfect little muffins and half of them were promptly eaten.

While our Pumpkin Chocolate Chip Muffins don’t have the typical pumpkin pie spice, they are so moist and delicious that it is literally hard to stop at just one.  Ask my daughter.


  • ½ cup butter or margarine, melted
  • ½ cup brown sugar
  • 2 cups pumpkin puree
  • ¼ cup milk
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 cup oatmeal (ground in a food processor)
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup chocolate chips
