Another salad that really isn’t a salad, well it is it just doesn’t have any greens, leafy greens anyways. Celery and green apples are still greens so if you are just looking for something green don’t worry I still got you covered. I have this unconventional salad that I love, my Crunchy Apple Almond Butter Salad. I posted it last fall with the almond butter version but I also like it with peanut butter, sometimes even powered peanut butter, or powdered peanut butter and yogurt. Most recently trying it with a Pumpkin Spice Peanut Butter which was delicious!

Apple Celery Salad with Pumpkin Peanut Butter

In the kitchen whipping it up and not sure how it came to be but A and I were in the kitchen and I think we were talking about a salad S makes with my mom that has coconut, oranges, pineapple, marshmallows, and mayo I think. I couldn’t tell you for sure but I can tell you I still haven’t figure out how that is a salad. So we ended up making it with Siggis Pumpkin Spice Yogurt. It was good and surprisingly not very much pumpkin flavor but the spices paired nicely for fall. My mom happened to stop over one day while I was making it again to photograph and thought it was Waldorf Salad I was like no. I got thinking a traditional Waldorf Salad is just apples, celery, walnuts, and mayo. Well no mayo and we added cranberries you could add walnuts or not, in the case you have a nut allergy or have a kid that doesn’t like nuts. I decided it would be a great salad to whip up for Thanksgiving or a fall get together, a healthier version of a Waldorf’ish Salad. I also made a dairy free/vegan version using So Delicious Culinary Coconut Milk and Peanut Butter & Co Pumpkin Spice Peanut Butter. I wasn’t finding a dairy free yogurt option that had good taste and texture in this. So salad is photographed, I have the recipe written, and I was like what do I call this…. Leave it to my husband to come up with the wonderful name Where Is Waldorf Salad. Yep not the girls my husband but it got a chuckle, it was late and maybe it was just my mood but I decided I would stick with the name. Since Waldo has a red and white hat it makes perfect sense then to have the dried cranberries in it, right? Yeah not sure if you are thinking I’m crazy but I can tell you that after you try this salad it really doesn’t matter what I call it because you will love it and so will your family!

Makes 2 main serving, about 4-6 smaller side dish/entertaining servings, easily multiplied for get togethers

Ingredients

  • 6-8 large celery stalks
  • 2 Granny Smith Apples
  • 2 TBSP dried cranberries
  • 2 TBSP chopped walnuts, optional
  • 1 5.3oz container Siggis Pumpkin Yogurt, or for dairy free/vegan version 1/2c CHILLED thick coconut cream from canned coconut milk (used So Delicious Culinary Coconut Milk) and 1 TBSP pumpkin peanut butter (used Peanut Butter & Co Pumpkin Spice Peanut Butter
