Minnesota mornings this time of year are really cold, or as “A” says frigid! So you get on your warm socks and putting on layers, which may be shed in an hour, later in the day, or never .You just never know how much the weather will change during the day or from day to day. I have kind of switched my breakfast routine to match the change in weather having warm bowls of oatmeal, muesli with warm milk, pancakes, or even more of our favorite muffins or breakfast cookies. I woke up one morning to not so chilly temps wishing I had checked the weather and made overnight oats. I grabbed my Seven Sundays Blueberry Chia Muesli I had sitting on the counter, as we were preparing to go out of town, added milk and let it soak while I went to get in a good workout. It was a crazy stressful week and I needed a good stress relieving workout! I got done and wanted a smoothie, but I had that muesli soaking, and another favorite Whole Me Lemon Berry Chia Clusters staring at me. What happened next was this breathtakingly beautiful breakfast bowl that even my husband commented on. Oh and it tasted as good if not better than it looked!

So doing what any food blogger would do I had to make it again it and post it! A few different versions to enjoy for whatever mood I’m in and this will definitely be a regular in my breakfast, or snack, rotation! It isn’t to different than the usual smoothie, smoothie bowl, muesli bowl, or other bowls we enjoy but the combination of flavors and textures coming together makes this AMAZING! Soaked muesli, a froyo like blueberry layer made with yogurt or as a protein smoothie (like a smoothie bowl), and crunchy chewy lemon blueberry chia clusters. Packed with flavor, texture, and nutrition! This has me full and fueled for hours!

Now there is a reason, or two, that I had to call this a Minnesota Morning Bowl. Not only was it a crazy Minnesota morning when this bowl was created and inspired but Seven Sundays Muesli and Whole Me Clusters are both local Minnesota companies! This is not a sponsored post these are just two of my local favorites, I pick up the muesli at Target and they are both available at Whole Foods. I also used the last batch local blueberries we picked and I froze for later. While this exact combination is simply delicious like many of my posts and as I say this is a great one for inspiration where you can plug in what works for you, your needs and tastes, and use your favorite local products. Try it my way and then switch it up and make your own version. Minnesota Morning Bowl

Makes 1 serving, or 2 smaller snack servings (use 1/2c muesli as 1/3c isn’t enough to split into 2)

Soaked Museli

1/3-1/2c muesli (used Seven Sundays Blueberry Chia Muesli, gluten free)

1/3-1/2c, same amount you use for muesli, non dairy milk (used So Delicious Unsweetened Vanilla Cashew Milk)

Ingredients

  • 1/3-1/2c muesli (used Seven Sundays Blueberry Chia Muesli, gluten free)
  • 1/2c frozen blueberries
  • 1- 8oz container or about a cup of yogurt (we like Stonyfield Greek Organic or Siggi’s, or So Delicious Greek Style Coconut Milk for dairy-free)
  • 2/3c dairy free milk (same used for muesli layer)
  • 1 scoop vanilla protein (we use Vega, depending on needs when making it)
  • 1/2c frozen blueberries
  • 1/4c Whole Me Lemon Berry Chia Clusters or toppings of choice
