S’more Mini Muffin Bites

Happy National S’more Day! We are starting our day off with these S’more Mini Muffin Bites and may top it off with a S’more Milkshake or S’more Ice Cream Bars or one of our many other s’more recipes!

Awhile ago I was out grocery shopping with the girls and A wanted S’more Mini Muffin Bites. While I wouldn’t normally buy them I bought them for her as she was going to be at gymnastics camp for 8 hours and I was needing things she could bring for snack, lunch, and eat quick in the morning. As she was also doing this while having soccer at night and she was tired I wanted her to get as much sleep as possible and these would be good with fruit and or yogurt to switch things up some mornings. She would normally have a parfait, cereal, or pancakes but having Kind Bars and other granola bars in her bag to go I didn’t want her to get bored. Well this backfired when she grabbed a bag on morning and said they were “gross and disgusting” and wouldn’t eat them. I scrambled to grab something else for breakfast for her but I felt so bad, well and happy kind of that she didn’t like them, because she was pretty excited. So I made it my mission to make her some S’more Mini Muffin Bites she would like, were just as fun, and healthier. I think I can say mission accomplished with these grain free, vegan S’more Mini Muffin Bites that almost every kid can and will enjoy! I made them grain free using cashew meal, this was kind of my chance but I think cashew butter and cashew meal tastes like cookie dough or cake batter, it has something about the flavor so I thought it would be great when trying to attempt the flavor in a healthy way. Next time I make them I’m going to try a buckwheat version. I added in protein, because well she needed it and protein is a great way to start the day and helps fill you up. Chia seeds for omegas, which also makes them vegan but if you want you can sub an egg. We did try banana but the banana flavor was too overpowering. Of course I had to add in marshmallows and chocolate to keep these fun and really what would a s’more be without chocolate and marshmallows? I decided against adding in graham cracker pieces to the mixture and instead sprinkled them on top as I always liked muffins with the crumbly toppings. A loved these muffins and I hope you and your family does as well!

S’more Mini Muffin Bites

Makes 20 mini muffins (you can make 24 but they won’t be as full)

Ingredients

  • 1c cashew meal
  • 1/2c vanilla protein powder (used Vega Sport Vanilla Protein Powder)
  • 1 tsp baking powder
  • 1/2c So Delicious Unsweetened Vanilla Coconut Milk Yogurt
  • 1 TBSP ground chia seeds, plus 4TBSP water
  • 2 tsp vanilla extract
  • 2 TBSP maple syrup, can also sub honey
  • 1/4c crushed graham crackers for topping, optional (used my Vegan Gluten Free Camp Crackers/ Graham Crackers)
