You may have already seen a spoiler of this Melon Mango Crush posted on Instagram. I had every intention of getting it written up and posted sooner but things have been as crazy as they were the day we first made it. I had pulled out the Vitamix to whip the girls up a snack quick before soccer while I was trying to make to head up north. They had wanted watermelon but we were out of fresh and I wasn’t going to cut up the ones on the table as I was planning on taking those with us. So I grabbed a bag of frozen watermelon chunks from the freezer and blended it with a fresh mango for a sorbet. We couldn’t take all the mangos with us and we had 6 of them because S had to have a flat of organic mangos and the price was right. I had made the mistake of taking the girls shopping with me the day before and they got so much fruit. When they ask about fruit and veggies I honestly almost never say no and I was a little scatterbrained trying to get the stuff on our list that I wasn’t thinking. We got home and had apples, a flat of mangos, a flat of peaches, a few bunches of bananas, grapes, cherries, two watermelon, oh and yeah the 5qts+ of blueberries we just picked and 3/4 of an ice cream bucket of raspberries we picked from the backyard. Good thing the girls like fruit, S calls herself a fruitivore! So I whipped up the mango, watermelon, and lime and gave it to them and got “This is the best ever you need to get it on the blog right away Mom!” from A and “Mmmmm yes!” from S. So what did I do….. I dropped everything, stopped packing and whipped up another batch writing it all down, taste testing, and photographed it for the blog. Yes I know crazy but how could I not as we would be leaving that night and I wouldn’t be in my kitchen for awhile. Because they wouldn’t let me freeze the next batch I whipped them into smoothies and put them in their Swell bottles to keep them cold to enjoy after soccer. Oh and I enjoyed a little myself and had to agree, it was good! We are all crushing on this creation and it will be a regular in our house for the rest of the summer for sure. Guaranteed as I already picked up a few watermelons to chop and freeze!
