Maple Balsamic Blueberry Salmon Salad

Trying to figure out what to make for dinner up at my parents for my dad for Father’s Day weekend and my mom said to make him salmon. I didn’t want to just do grilled salmon but wanted something more exciting and nice. It isn’t often that I would go to a restaurant and order a salad. Usually I am left unsatisfied if I do. There have been times though that one will hit the spot. Looking to create a nice dinner a salad isn’t usually at the top of my list either but more often than not lately that is what I am craving. I had recently made Maple Pepper Balsamic Salmon and used it as inspiration and built around that to create a salad that would be flavorful and yet satisfying for even the biggest “man’s appetite”. My dad also loves blueberries so those were a no brainer. The salad came together nicely, both my dad and my husband enjoyed it. I even whipped it up for dinner before we headed up so I could photograph it at home as I knew I wasn’t going to be able to up there. I made it, photographed it, and than threw it a Tupperware to enjoy on the sidelines of the soccer field since my oldest had a soccer game and was getting ready as I threw this salad together. It was pretty funny as it was a huge container and I was like what doesn’t everyone enjoy a big salad like this at their kids soccer game? Honestly I would do it again and I probably will. Weather it is thrown together or plated nicely it still hits the spot and tastes amazing! So next time you are entertaining, or maybe just looking for a nice dinner to enjoy with a glass of wine or that someone special don’t rule out salad and try this one!

Maple Balsamic Blueberry Salmon Salad

Makes 4 main dish servings

Ingredients

  • 16-24oz salmon
  • 1 1/3-2c fresh blueberries
  • 1/2c shredded carrots
  • 16-24oz spinach arugula mix, or greens of choice
  • 1/3c balsamic vinegar
  • 1/3c pure maple syrup
  • 1-2 TBSP Maple Pepper seasoning, optional (You can buy this online or at a specialty store or you can make your own with maple sugar and pepper)
  • 1/3c chopped pecans, optional
