Nov 04 Anadama Bread

A classic New England bread, flavored with cornmeal and molasses. Hearty and delicious, and perfect with cool-weather fare. Be sure to plan for a two-day baking schedule, to allow the cornmeal to soak overnight.


  • 1 cup medium-grind organic cornmeal
  • 1 cup water, at room temperature
  • 4½ cups unbleached bread flour
  • 2 teaspoons instant yeast
  • 1 cup lukewarm water
  • 1½ teaspoons salt
  • 3 tablespoons blackstrap molasses
  • 3 tablespoons maple syrup
  • 2 tablespoons unsalted butter, at room temperature
