Macaroni & Cheese Cups For The GrownUps w/ Velveeta Shells

It is no secret that I am in love with all things CHEESE! Love, love, love. My Husband and kids share this love as well, so that always makes it fun to come up with some easy, cheesy meals that we ALL can enjoy.

Of course macaroni and cheese is an all time favorite around here and the top pick is always Velveeta Shells and Cheese . In fact, my kids call it “Creamy, Cheesy Yum”. That started years and years ago with the Teenager {they’re so cute at that age} and it just stuck!

But here’s the thing, sometimes The Husband and I want to spice things up a bit! You know, a fun date night when the kids are away with the Grandparents like they are this week? And what could be more fun than to create a spicy twist on a family favorite??

Ingredients

  • Cooking spray or butter to grease muffin tin
  • 2 cups dried breadcrumbs, divided
  • 1 box Original Velveeta Shells & Cheese
  • 1 carrot {or sub 1 cup diced broccoli}
  • 2-3 jalapeno peppers, fresh or canned {optional & can substitute dicd roasted red peppers}
  • 1/2 – 2/3 cup shredded cheddar cheese
  • Olive oil for drizzling
  • Salt & Pepper to taste
