It is easy to make and is one of those dishes that keep getting better the next day, that is if you have any left over. I added my roasted rosemary potatoes as great side. Another in ultimate comfort food!

Ingredients

  • 8-10 small Yukon Gold potatoes, quartered
  • 1 sprig of rosemary, chopped
  • 2 garlic cloves, minced
  • 1 yellow onion, sliced
  • salt and pepper
  • 6 tbsp extra virgin olive oil
