It is easy to make and is one of those dishes that keep getting better the next day, that is if you have any left over. I added my roasted rosemary potatoes as great side. - 8-10 small Yukon Gold potatoes, quartered
- 1 sprig of rosemary, chopped
- 2 garlic cloves, minced
- 1 yellow onion, sliced
- salt and pepper
