  • 1 pound boneless skinless chicken breasts, cut into 1 ½ inch pieces
  • 1 tablespoon minced fresh rosemary, or ½ tablespoon if you are using dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 3 teaspoons extra virgin olive oil, divided
  • 1 cup chopped shallots (1½ large or three small)
  • 1 clove garlic minced
  • 3 tablespoons cider vinegar
  • ¼ cup white wine
  • 1 14 ½-ounce can diced tomatoes with their juice
  • 5 pitted and chopped Kalamata olives
  • 1 tablespoon capers drained
  • ¼ cup fresh basil
  • Pasta of your choice
