I believe that I have mentioned before that my son, Madden loves Lemon Poppy Seed Cake….it is his favorite. I find this so hard to grasp being a devout chocolate lover. But after his birthday cake snafu, I found myself on the search for the best lemon poppy seed cake and so happy I found it. I took a classic sour cream bundt cake that I made for my base for my Maple Pecan Coffee Cake. This recipe is to die for and I just love it. So I modified that cake to make this Lemon Poppy Seed Cake and it really is the best ever, just ask Madden.

Ingredients

  • 12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
  • 1 1/2 cups granulated sugar
  • 3 extra-large eggs at room temperature
  • 4-5 tablespoons lemon zest
  • 2-3 tablespoons lemon juice
  • 1 1/4 cups sour cream
  • 2 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3 teaspoons poppy seeds
  • Glaze
  • 4 ounces cream cheese, room temperature
  • 1/2 cup confectioners' sugar, sifted
  • Pinch of salt, optional
  • 1-2 tablespoons freshly squeezed lemon juice
  • 2-3 tablespoons milk, plus more if needed
  • Lemon zest, garnish
