Sweet potato what??? Yes, I know… you normally don’t see “sweet potato” and “smoothie” in the same sentence. But trust me on this… sweet potatoes and smoothies do belong together. But more on that in a minute.
Sad as it is, summer in my house is officially over. The boys are back in Dallas (sniff, sniff) and I am back in the classroom… which means my schedule is back to being a little crazy. Since I teach in the evenings, I am always looking for nutrient dense snacks to tide me over and smoothies are my snack of choice since I can mix one up and slurp it down on my way to class.
- ½ cup Chobani Plain Greek Yogurt
- ½ cup Chobani Vanilla flavored Greek Yogurt
- ¾ cup roasted sweet potato (about 1 medium sweet potato)
- 1 cup fresh orange juice
- ½ tsp. pumpkin pie spice
- ¼ tsp. ground cardamon
- 1 tsp. honey
- pinch of salt
