Gazpacho

Gazpacho

Ingredients

  • 3 cups tomato juice
  • 1½ cups chopped tomatoes
  • 1 cup cooked lentils
  • 1 cup chopped red bell pepper
  • 1 cup chopped cucumber
  • 1 jalapeno, seeded (or not if you like heat!)
  • 2 shallots, chopped
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons canola oil
  • 2 cloves garlic
  • 2 teaspoons hot sauce
  • ½ cup diced tomatoes (optional)
  • ½ cup diced cucumber (optional)
  • ¼ cup minced cilantro (optional)
