Day 306 – Blueberry Lemon Bread

I had purchased a bunch of blueberries at Costco the other day and before my children devoured them, I figured I’d better put them to good use.

Not that I minded that they were eating them, that’s what they’re for, but I really wanted to put them into something.

I haven’t made blueberry bread yet, so wanted to try that.

I found this recipe at Crazy for Crust and made some changes to it.

3/27/12 – As an update to this bread, warm fruit in the oven or microwave and toss them in a minimal amount of flour before adding them to the batter.  This prevents them from sinking.  Thanks so much to my faithful reader, Chantelle for giving me that tip!  It works like a charm and your bread won’t have sunken blueberries as mine did in the picture below.

  • Blueberry Lemon Bread – makes 1 loaf
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 3/4 cups sugar
  • 1 teaspoon salt
  • zest and juice of 1 medium lemon
  • 1/4 cup butter, melted and cooled
  • 2 eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla
  • 1 cup fresh blueberries
