Easy Eggplant Parmesan

Eggplant parmesan is a classic Italian comfort food. A layered casserole much like lasagna but with slices of eggplant taking the place of lasagna noodles.

Ingredients

  • 2 medium eggplants (about 1½ pounds)
  • Olive oil
  • 1 medium onion
  • 3 cloves minced or crushed
  • 14 oz can diced tomatoes
  • 6 oz can tomato paste
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • 1⅓ cup grated parmesan
  • 1⅓ cup shredded mozzarella
  • ½ cup Italian seasoned Panko bread crumbs
